Executive Chef/Owner Arturo Davila
Executive Chef and Owner Arturo Davila has had a passion for food and cooking his whole life. He opened his first restaurant 25 Years ago in Chihuahua, Mexico, specializing in local Mexican cuisine. He then moved to the US, the Glenwood Springs area to be exact. He then expanded his culinary knowledge into American, Italian and French style cuisine. He quickly moved to the Head Chef position for the long-standing Marshal Dillons Steak House in West Glenwood. He then was then one of two Head Chefs at a popular French Restaurant in Carbondale Colorado. From there, after sharpening his skills as a Chef, he decided to branch out once again to open his own restaurant, CHOPS Steakhouse and Bar is the result of a life-long dream. What makes his style unique, is not only his own knowledge but that of the generations he learned (His Grandmother, and Mother) he has combined all of these elements, and is eager to share them with the Roaring Fork Valley.
MEET THE CHEFS
Director of Operations and Chef De Cuisine Carlos Davila has taken a different route than his Father, having chosen a Career in Law Enforcement as a full-time police officer, and still volunteers time to law enforcement, and the community. However, When the idea of a restaurant was sparked by his Father, he jumped at the opportunity and wanted a key role in overseeing the operations of the entire restaurant and staff. Carlos began his passion for everything culinary as a result of working beside his Father from a young age, as it is the goal of the Davila family to pass on the style, recipes, passion for food, and cooking to each younger generation, as it has before. He also held a position as the Head Chef well known and long time local eatery, The Riviera Supper Club. From the Riviera, he sharpened his skills in hospitality by working at the prestigious and luxurious Hotel Jerome in Aspen, CO. His sites are now set on making CHOPS Steakhouse and Bar the #1 place to dine in the valley.
